Kuhajte 3-4 sata, dok se meso ne počne odvajati od kosti (U loncu na pritisak kuha se oko 1 sat). Izlijte u širu posudu da se što brže hladi. Odvojite kosti, a meso narežite na komade. Kada voda provri, dodajte očišćene i oprane ostale namirnice. Kuhajte oko 4 sata, a u loncu na pritisak oko 1 1/2 sata, odnosno dok se količina tekućine ne smanji za trećinu. Izlijte u veću posudu i pustite da se malo ohladi. Odstranite sve kosti i suvišnu masnoću. Mrkvu i peršin narežite na kolutiće, složite u plitku posudu i prelijte tekućinom. Na kraju stavite komade mesa koje ste odvojili od nogica. Ako želite, možete dodati nekoliko usitnjenih režnjeva bijeloga luka. Ostavite na hladnom mjestu da se zgusne.
